Is there any way to give custom textures to the other things such as the rats, globe painting, etc.?
Since I have made my own backrooms wallpaper and ceiling and carpet textures in gimp, I thought it would be really neat to be able to retexture the other things to fit as well. If it isn't possible, that's ok, but there has to be some sort of way?

Not that I'm aware of, no. You'd probably have to hack into the program to make something like that happen, since these things will be hard-coded into it.
